Breadfruit appeared in New Guinea 3,500 years ago. It was introduced to Martinique in 1790 by settlers as food for slaves. A high-calorie food, breadfruit is now grown next to many houses in the countryside.
Cookie recipe
1 cup all-purpose flour, ½ cup breadfruit flour, 2 tsp ground ginger, 1 tsp ground cinnamon, ½ tsp baking soda, ½ tsp salt, ½ cup butter, 2/3 cup molasses
Instructions
Preheat the oven to 190°C.
Beat butter until fluffy. Beat in molasses, gradually beating well. Gradually stir into dry ingredients. Refrigerate dough at least 1 hour. Bake on greased baking sheet in moderate oven until cookies are light brown, 5 to 7 minutes. Remove from oven and cool on wire racks.
